Friday night a la Casa del Hart & Soul: Coconut Lentil curry with simmered chicken.
Sounds quite hard but it’s actually not at all! Perfect for impressing people at dinner parties or in your own household… (story of our lives). This Winter weather is screaming for us to make warm comfort food. But let’s be honest, who has time (or faith) to patiently wait for a slow cook dish to be ready? To avoid you to crank the heat like a greedy (wo)man ending up with burnt dishes and regrets, our friend Melanie aka @frommylittlekitchen has created what might be the most efficient and delicious recipe of all time. And we did not dislike the result.
Our maxim is ‘where there is a will, there is a way’. So, every time we think we can give a recipe a twist and make it our very own, we try and do it. The Hart & Soul family also believes that curry is THE perfect meal to gather friends and family and inspire a sense of place and community. A big pot filled to the brim with fragrant, assorted and colourful foodstuffs.
Also Curry counts as full Friday night plans, right? If you answered ‘yes”, then let’s be friends. If you said ‘no’, just remember that everyone is wrong at least once in their lives…
Here is our version of the classic Curry which is super quick, easy and heavenly delectable. Just in time for tonight, in case you need to finalise your agenda.
